Fondue For One

I was craving fondue…

No I wasn’t. I just really wanted an excuse to use the fondue pot I brought as a Christmas gift for no one in particular and ended up keeping for myself.

I used to buy this ready made fondue mix provided by Trader Joes. They discontinued it and I have been too intimidated to make my own fondue. Not too long ago, one of my favorite Food Network Chefs:  Giada De Laurentiis made an easy fondue on her show. I was inspired and headed to my local Wegmans to gather the ingredients.

(BTW: Wegmans is the ISH!!)

The recipe included pork. I don’t eat pork so that was omitted from the fondue. Since I was making it for me, I cut her recipe in half. This didn’t quite work as I needed more cheese. I started off with 4oz of each cheese but ended up added more than that. Enough until the fondue was at a consistency I like.

Man. It was gooood.

A light and simple meal after a long day.
